We are working with a group of producers in San Antonio,
Tolima, helping them improve the quality of their coffee
through better processing techniques. Every coffee which
cups 86.5 and above, we separate as a microlot, but since
it would be unfair to just take the best and leave the rest,
we have created this blend of 100% Caturra lots which
we aim to cup 85+, which is what they are achieving for
most of their coffees as they are all high altitude farms.
We check every coffee to make sure it has a clean, sweet
cup with no defects and we test the density of all the
beans to make sure you will have an even roast once it
is blended.
This is our way of supporting this community, to give them
an opportunity to sell all their coffee, not just the top lots.
We saw a need to offer more accesibly priced
coffees with a choco sweet profile. This is a lot
we put together by cupping coffees from the
small producers of the San Juan de la China area
above Ibague, Tolima. We picked the cleanest
washed coffees with a sweet and choco profile.
This way we can buy more coffees from small
producers, not just microlots.
